sneak peek 3.11

hey everyone... it's been a while since I've done a sneak peek for an upcoming line, so I thought I'd throw one at you today! I have a new kits releasing tomorrow @DHD so I put together this layout to tease you with :)

project life. week 2. jan 8-14.

week 2. warm weather. cold weather. snow. finally. lunch date with daddy. chiropractor visit for Lydia. starting again on c25k. homework. homework. homework. dr visit for me. more invention convention finishing for Evan. science fair experiements for Collin. stress. a friends birthday party for Evan. & a family trip to see the Cardinal Caravan to end our week.

i found myself using lots of printables {this page Hello Forever, Paislee Press & some older ones from Jen Allyson} & labels {squee! new from Martha Stewart} this week & also used a new {free} 4x6 photo template {from Paislee Press} to put together photo collages for the 4x6 spots. I included a printout the dr gave me on my blood test results. lots of stitching this week too to add a little something.

I also seemed to use an old Making Memories magnetic stamp set that I've had forever. may have to look into getting some more little alphabet sets.  I really liked using them again.  I used a little Kraft Funday on this page too. the 6x6 pads are so perfect.  I printed out a screenshot of a text conversation I had with Collin one day, stamped out a portion of something Lydia said, included a birthday party invitation, a kids menu from a restaurant we ate at & a sticker from a jersey Evan got this weekend. On this page I used another few printables from Hello Forever {umm, hello, see the 23 on the jersey & the 23 on the card? meant to be} & Paislee Press & also my Everyday Journaling Cards

I also included a 6x12" insert this week to document our Saturday trip to see the Cardinal Caravan.  It was definitely a highlight of our week.  I could have included so much more, but tried to not go overboard because I'm sure I'll be making layouts about it as well.  For this I tried to do photo collages in photoshop to streamline the process a little. I added an overview of the trip by typing it up & printing it on a journal page.  I also included a bit from a brochure we got there. 

so that's it! week 2 done.

december daily {days 18-25}

first, let me say, I've loved doing this album.  It was definitely a challenge for me & I was really excited that I completed it.  Next year, though, I'm going to simplify for sure.  Photo a day.  I found that as soon as the rush of all the Christmas to-do's hit me {school parties, wrapping, last minute holiday whatever & kids home} I basically just had to drop it & wait until after Christmas to complete it.  I really wanted to include more in those last days, but it would have just been too much for the book {plus I was just ready for it to be done}.  I'm planning on layouts to tell a more complete story of our Christmas Eve & Christmas & also want to make a mini for our Elf, Jessie & his daily happenings.  So anyway, here it is...

on this day I dove into wrapping. of course I had a little "helper" too.  I added in a page I made from a brown lunch bag, which was what I used for a lot of our wrapping.

12.19.11

on this day, Evan's class had a gingerbread house day {his teacher has been doing this with her class for years... it's so much fun}. I went to help him out & loved what we created together :)

on this day I was in gift-making mode.  the kids' last day of school was the next day {which included Christmas parties} so I HAD to get the teacher gifts made! I didn't send out too many actual cards, but wanted to include the card I had sent out & the photo of the kids I had included in them somewhere in the book, so this is where it ended up.

on this day, there was so much going on! seriously if I included it all, it would probably be 6 pages... Christmas parties, babysitting, Christmas concert & best of all... grandma & grandpa came home!  The photo of Evan & my mom is priceless... he was SO excited to see her!  The back of the page is a folded program from Evan's concert with his name circled.  The concerts/plays at our elementary school are always the best.  We are so lucky to have an incredible music director!

on this day we did tons of baking & making!  Lydia had been asking me constantly about making cookies for Santa, so that's what we did!  I was messing around with a few things for this page on my Silouette sd.  I cut the from banner, but it didn't cut all the way through, so I just peeled away the letters & included it anyway :)  I also made the cookies for santa title that I made up with a font on my computer.

this was a not-so-happy day. although it was my moms birthday, we also spent the night at my aunt Betty's visitation, who had passed away a few days before.  on the upside, it was great to be able to see all of our family.  I included 2 pictures I captured while we were visiting of Lydia & Collin with cousins we don't get to see too often.  this was the reason my parents made the trip back from Texas as well, which was a major bonus for us as well, as we weren't planning on getting to spend Christmas with them this year {which would have been a first}.

I always have LOVED Christmas Eve... for as long as I can remember, it has been when my family celebrates together.  We start with mass, then supper & then PRESENTS!  We've changed it up over the years a little, but it still is my favorite.  Again, this one could go on for pages & pages, but I kept it super short.  The day started with my aunt's funeral & then went onto church with Dan's dad & then fun with the Klesner family at my sisters.  Then home to get ready for Santa!  The picture is our tree that night after Santa had made his way to our house... :)

on this day... it was Christmas!  Since we've had kids, this is our day to spend together at home.  It always starts with the kids waking us up at the crack of dawn & excitedly ripping through stockings & presents. This is followed by a homemade breakfast, lots of assembling, playing & relaxing. This Christmas we did something new & had Dan's family over that night for supper.  It was great to get everyone together, with his family in all different directions, it's nice to be able to see everyone & have a relaxed time to visit.

lasagna soup & pb choc chip oatmeal cookies

I've been asked by a few people for these two recipes, so I thought I'd share them here.  The lasagna soup we made a week or so ago & it was sooo yummy{& easy}! Definitely good old comfort food!  I found the recipe from Pinterest & the link sent me here.  I doubt that these guys make anything that isn't good... I mean, there mama is Paula Dean!

Ingredients:

2 teaspoons olive oil
1 pound Italian turkey sausage, casings removed
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 (32-ounce) container chicken broth
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomatoes
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
1/2 cup chopped fresh basil
3 tablespoons grated parmesan cheese
1/2 cup reduced-fat shredded mozzarella cheese

Instructions:

Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven. Add the sausage, onion, bell pepper, and garlic. Cook over medium-high heat, stirring occasionally, until the sausage is crumbled and browned, 8 – 10 minutes.

Add the broth, tomato sauce, diced tomatoes, salt, and crushed red pepper. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 20 minutes. Add the noodles; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the soup thickens slightly and the noodles are tender, 10 – 12 minutes. Remove from the heat; stir in mozzarella, basil, and the Parmesan.  (whole-wheat lasagna noodles take a little longer to cook.)

Nutritional Information:

Per Serving (1 cup) 225 Cal (27% from Fat, 42% from Protein, 31% from Carb); 23 g Protein; 7 g Tot Fat; 2 g Sat Fat; 2 g Mono Fat; 17 g Carb; 2 g Fiber; 4 g Sugar; 108 mg Calcium; 3 mg Iron; 826 mg Sodium; 53 mg Cholesterol  {this works out to 6 ww points+ per cup}

Servings: 8 cups
Prep Time: 5 min
Cook Time: 1 hour

Peanut Butter Oatmeal Chocolate Chip Cookies

3/4 c Crisco

1/2 c peanut butter

3/4 c brown sugar

3/4 c white sugar

1/2 c egg beaters or 2 eggs

1 tsp. soda

1 tsp. salt

1 tsp. pumpkin pie spice or cinnamon

1 T. honey

1 tsp. vanilla

1 1/2 c whole wheat white flour

3 c oatmeal

bag chocolate chips

Cream Crisco, peanut butter & sugars.  Add eggs, vanilla & honey.  Add dry ingredients to creamed mixture.  Add oatmeal.  Add chocolate chips.  Bake at 325 degrees from 8-10 minutes.

these are a favorite at our house & the recipe has been modified lots, but this is how I made them yesterday & I think these were the best yet!  This made about 3-3 1/2 dozen & they work out to be about 4-5 WW points+ per cookie using the Pampered Chef medium cookie scoop.
